New Discoveries Of The Week: Cool New Things I'm Trying, Books I'm Reading, And More!

Best. Fish. Ever.

Lately, I've been trying my hand at making sashimi and fish collars with some pretty decent sushi-grade salmon and kanpachi. (For those who have never had it, kanpachi is an amazingly rich and creamy fish, but it has a good firm texture for slicing/prepping.) You can read more about kanpachi on the Seatopia website here.

For the sashimi, I thin-sliced the kanpachi, then dressed it up with a touch of lemon, sea salt, and spicy mayo and served over a bed of sushi rice with chives. I also broiled several kanpachi and salmon collars (this is also super simple). I cleaned and dried the collars, drizzled with melted ghee, then placed skin side down on the broiler for six minutes, and flipped for another six minutes. I served these with dill, sea salt, and lemon juice. A few days later, I made my family melt-in-your-mouth-good poke bowls by using a similar recipe, but made with liquid aminos, nori wraps, and sushi rice.

Anybody else out there mess around with cool “raw fish” recipes? I think I'm becoming just as big a fan of sushi as I am steak (and yeah, I do often shoot some oregano oil down the hatch afterward to nuke any potential parasites).

My Newest Smoothie Superfood: Sea Moss
