I'm often asked about my music of choice for studying, working, and simply lounging around. Frankly, I'm a bit plain Jane, but I always find myself returning to my classical roots. The past four weeks, my home has mostly been the Pandora (yep, I'm an old-school Pandora guy) “Classical Music For Study” station.
In addition to improving cognition, decreasing blood pressure, and activating the parasympathetic nervous system, here are a few more shocking benefits of listening to classical music during your daily routine.

– A New Way To “Force Yourself” To Breathe Through Your Nose During Workouts

One of my favorite things to grab when I'm traveling, running out the door for a long hike or adventure, or when I'm just hankerin' for a delicious chocolatey snack, is the Kion Bar.

I’ve always been a fan of pesto, but there’s just one problem with traditional pesto: it typically calls for hefty amounts of Parmesan and I (and many of you!) just don’t personally do that well with large amounts of dairy. However, the cheese is what tends to give pesto it’s unique “umami” flavor. However, here’s a simple kitchen trick: the process of fermentation can give nettle the *same* wonderful cheesy flavor, without any dairy. So for this Fermented Nettle-Walnut Pesto recipe, I harvested 8 cups of fresh nettle from my backyard, then put it into a glass mason jar with salt, water and 4oz of leftover brine from an empty pickle jar. I then let it sit on the kitchen counter for 14 days to ferment (nettle takes a bit longer to ferment because it’s lower in natural lactobacilli compared to, say, a cucumber for pickles). Once the fermentation was complete I prepared the pesto as follows: Into food processor, combine: -The fermented nettle -2 cups walnuts -1 cup extra virgin olive oil -1 tablespoon sea salt (not necessary, but if you want a bit of extra salt kick, do it) -1 tablespoon ground pepper -Zest of one lemon Blend for about 60 seconds, until texture is thick and clumpy, but not “runny”. This stuff tastes FABULOUS – I love it with ribeye steak, salmon, or simply on a rice cracker with a bit of fresh tomato.
