A New Conference About The Politics Of Sex

This September 9th-11th, the Politics of Sex Conference in Lebanon, Tennessee is happening just outside of Nashville. This is a brand-new event that will be put on by my friends at the Cross Politics Network, where I have been a podcast guest in the past.

What's the conference all about? The name kinda says it all, but, well, sex is inherently political. What you do in the privacy of the bedroom never stays there. It always impacts the world. A culture is either built on the fruitfulness of a godly union between one man and one woman, or else it dies from self-inflicted fruitlessness and sexual rebellion against God. Worldview matters, the nuclear family matters, definitions of male and female matter, godly children matter. Our sexual choices and values are building and cultivating a particular kind of public square.

This Is Not Your Grandma's Liver & Onions

You’ve likely heard me talk about how nutrient-dense organ meats are, and one incredibly tasty way to consume organ meats and actually *like* the flavor is my twist on the classic “liver, bacon, and onions” recipe. I call it…drumroll, please…Fried Liver With Pork Belly & Onions.

I whipped this up the other night for my family and it was an absolute, immediate hit. For this recipe, I used beef liver and pork belly from US Wellness Meats (save 15% with code BEN). Here's how you can make this simple recipe:

  • Sauté down thick-cut pork belly and cook off the fat
  • Caramelize sliced white or yellow onions in the pork fat
  • Pat the beef liver dry (preferably after it has been soaking in kefir, buttermilk, or lemon juice for 24 hours) and then dredge it through whipped pastured eggs and buckwheat flour (in that order—and I used Himalayan Buckwheat Flour, which is a big feature of my new cookbook as one of the most nutrient-dense starches on the planet)
  • Add a generous amount of salt and pepper to the flour mix if you want, along with any spices you desire
  • Cook the liver down on each side in a cast iron pan with butter and pork fat. When the liver is almost done (about 4-6 minutes per side), add the pork back into the pan to finish it off to absolutely perfect crispiness.
