New Discoveries Of The Week: Cool New Things I’m Trying, Books I’m Reading, And More!
– Delicious “Low Carb-High Collagen Chocolate Nut Butter Loaf” I Made
Earlier this week I made my boys so-called “Cookie Dough Bread,” which I affectionately have re-named “Low Carb-High Collagen Chocolate Nut Butter Loaf.” I discovered this recipe in Paleo Magazine and decided to make it for the little guys while they were at basketball camp for a post-camp snack. I may have stolen a slice or two myself. This stuff is friggin’ DELICIOUS! Here’s the recipe:
- 4 large eggs
- 1 tsp baking soda
- 1 cup cashew butter (I used Artisana)
- 2 heaping scoops Ancient Nutrition Chocolate Multi-Collagen (code: BEN will save you 15%)
- 1/2 cup KNOW Foods Unsweetened Low-Carb Chocolate Chips
Preheat oven to 350. Line a 4×8 loaf pan with parchment paper. With a mixer, mix eggs, baking soda, cashew butter, and collagen until fully combined, then fold in chocolate chips and spoon batter into loaf pan. Bake until golden brown (around 35 min for me) and a toothpick inserted into center comes out clean. Cool for 15 minutes, then remove, cool on a wire rack completely, and slice up. It’s pretty good with…you guessed it…more cashew butter. Bon appetit, and let me know if you try it!

– Another Life-Changing Book I’m Currently Reading
In last week’s weekly roundup, I told you about the book The Second Mountain, and how deeply meaningful I found it for direction and purpose in life. After reading it, I dug into a similar title: Falling Upward by Richard Rohr.
In the book, he seeks to help readers understand the tasks of the two halves of life and to show them that those who have fallen, failed, or “gone down” are the only ones who understand “up.” Most of us tend to think of the second half of life as largely about getting old, dealing with health issues, and letting go of life, but the whole thesis of this book is exactly the opposite. What looks like falling down can largely be experienced as “falling upward.” In fact, it is not a loss but somehow actually a gain, as we have all seen with elders who have come to their fullness. If you liked the Second Mountain, you must read this one as a follow-up. It’s a life-changer. Here’s a video I shot that includes a bit of inspiration from this book and from The Second Mountain.
